Slow cooker tender turkey crown

Amazingly moist! A turkey crown is slow cooked in white wine and fresh herbs until the meat is juicy and tender. Makes Christmas dinner very easy!

Ingredients
Makes: 2.15kg turkey crown

  • 1 (approx 2.15kg) medium turkey breast crown
  • Salt and ground black pepper to taste
  • 5 sprigs fresh rosemary, divided
  • 5 sprigs fresh thyme, divided
  • 1 onion, chopped and divided
  • 110g cold butter, sliced
  • 250g celery leaves, chopped
  • 375ml white wine, or more to taste

Method
Prep:15 min Cook:6 hr Ready in:6 hr 15 min

  1. Sprinkle turkey crown with salt and black pepper. Place 2 rosemary sprigs, 2 thyme sprigs, 1/4 of the chopped onion, and butter slices into turkey crown cavity.
  2. Place celery leaves, remaining white onion and remaining fresh herbs into a large slow cooker. Place turkey crown over vegetables and herbs with the top facing down. Pour white wine into cooker and cover.
  3. Cook on High until meat is tender and cooked through, about 6 hours. Remove form pot and cover with foil. Let turkey breast rest for 15 minutes before slicing.

I modified the recipe, using fresh bay leaves instead of rosemary and thyme. Had no celery, so stuffed the cavity with 5 large garlic cloves instead. 2kg crown - only cooked for about 5 hours on high and finished off in the oven for 15 minutes to crisp and brown the skin. Did this as an alternative to traditional roast Turkey and the family agree that it is the tastiest thing we've ever eaten at Christmas. This will be a regular feature in years to come. -  27 Dec 2012

I held my very first Christmas dinner last year and when I told everyone I was going to slow cook the turkey crown they were very dubious. It turned out to be a massive hit! Very moist and juicy and the smell was amazing! it didn't carve well, it was almost like pulled turkey but it was honestly the most delicious turkey we have ever had! will be on the menu this year too. -  31 Oct 2015

This turned out very well.I added in frozen mixed veg and at very end put the veg in oven for 5 mins so they were no longer soggy.I used Turkey breast from Lidl. -  04 Dec 2015
